An antibrowning composition comprising calcium ascorbate, calcium propionate, and calcium chloride, wherein calcium ascorbate is present in the amount of about 60% to about 95% by weight, calcium propionate is present in the amount of about 5% to about 24% by weight, and calcium chloride is present in the amount of about 0.5% to about 7% by weight, based on the total weight of the composition.
