The present invention relates to a manufacturing method of germinated compressed barley which is not husked and is germinated brown rice used for cooking with use a germinating process, a vernalization process, a dextrin turning process before a compressing processing and a drying process, wherein the dextrin process is made at relatively low temperatures in the manufacturing method of the present invention, compared with an existing manufacturing method of compressed barley, which uses the saturated vaporization or superheated vapor and accordingly requires high-priced equipment and high-priced energy cost, thereby significantly improving taste and nutrients due to flexibility of compressed barley structure and functions of increased free sugar and various type of amino acid series in an activation process of enzyme and leading to an eco-friendly manufacturing method of compressed barley at an affordable cost in high efficiency. |
