The present invention relates to a method for dry-maturing beef. More specifically, the method includes a step of dry-maturing the beef at a high temperature for a predetermined period of time after dry-maturing the meat at a low temperature. Accordingly, the present invention can mature the core part of the beef to enhance the taste and flavor of the beef. |
