摘要 <p>Provided is a xylanase that can saccharize biomass more efficiently than conventional art and exhibits superior heat stability. This xylanase is selected from the following (a)-(c): (a) a protein exhibiting xylanase activity and comprising an amino acid sequence in which at least one from amongst a 77th position alanine, a 212th position serin, a 214th position alanine, a 217th position glutamine, a 323rd position serin, and a 328th position alanine in an amino acid sequence represented by SEQ ID NO:2, is substituted with the following amino acid residues; 77th position: proline, 212th position: alanine, 214th position: proline, 217th position: proline, 323rd position: asparagine, and 328th position: proline; (b) a xylanase protein comprising an amino acid sequence exhibiting equal to or greater than 90% similarity, other than the substitution locations, to protein (a); and (c) a xylanase protein comprising an amino acid sequence in which one or more amino acids at positions other than the substitution locations of protein (a) are either deleted, substituted, or added.</p>
