A powdered oil or fat composition which comprises an edible oil or fat, indigestible dextrin and a caseinate as essential components. It is preferable that the powdered oil or fat composition comprises 5 to 84.9 mass% of an edible oil or fat, 5 to 85 mass% of indigestible dextrin, 0.1 to 10 mass% of a caseinate and 0.1 to 2 mass% of an edible emulsifier. Thus, a powdered oil or fat composition which is free from the bleeding of oil or fat and which exhibits excellent flavor, mouthfeel, fluidity, and dispersibility in water and a process for producing the same are provided. |
