<P>PROBLEM TO BE SOLVED: To provide a new beer yeast having a Ginjo-shu (high quality sake) aroma, and to provide a method for producing a beer with the yeast. <P>SOLUTION: There is provided a new yeast IB1407 strain obtained by hybridizing beer yeast with Ginjo-shu yeast as a hybridization partner by a conventional hybridization method.
