摘要 The present invention relates to a method for preparing a dough composition using fermented Japanese angelica tree (Aralia elata) leaves and cookies thereof. More specifically, the present invention can provide the cookies using the Japanese angelica tree leaves and ferments the Japanese angelica tree leaves to enhance the quality and palatability. According to the present invention, the preparation method includes: a fermentation step of fermenting the crushed Japanese angelica tree leaves; a filtering step of filtering the fermentation from the fermentation step to acquire a fermentation broth of the Japanese angelica tree leaves; a kneading step of obtaining the dough composition by adding the fermentation broth of the Japanese angelica tree leaves; a shaping step of shaping dough composition; and a baking step of baking the dough shaped in the shaping step.
