[Problem] To provide: a novel compound capable of imparting an excellent crystallization-accelerating property to an oil or fat; and a use of the compound. [Solution] A polymeric compound according to the present invention is represented by chemical formula (1) [wherein X1, X2 and X3 independently represent a residue produced by removing a hydroxyl group from a carboxyl group in a C18-28 hydroxy fatty acid which may have one carbonyl group in the chain and then removing a hydrogen atom from the hydroxyl group, R1, R2, R3, R4 and R5 independently represent a hydrogen atom or a residue produced by removing a hydroxyl group from a carboxyl group in a fatty acid which may have one carbonyl group in the chain, m1, m2 and m3 independently represent an average molar number falling within the range from 0 to 15, and n represents an average polymerization degree falling within the range from 0 to 100, wherein multiple X3's, multiple R3's and multiple m3's may be the same as or different from one another when n is 2 or greater], and has a molecular weight of 3,000 to 100,000. |
