The present invention relates to a pepper paste including yams (Dioscorea japonica) and sweet wormwood (Artemisia annua) and a preparation method thereof. More specifically, the method includes the steps of boiling the sweet wormwood in water to prepare a sweet wormwood solution; mixing a maltose oil solution with the sweet wormwood solution, adding steamed glutinous rice, fermenting the mixture, and boiling down the fermented mixture; mixing liquid glucose, fermented soybean powder, and salt to the boiled mixture and cooling the mixture; adding pepper powder, yam flour, and alcohol in the cooled solution. The present invention boils the sweet wormwood in water and uses the solution to obtain the salt reduction and antioxidant activities and additionally uses the yam flour in the pepper paste to enhance the sticky and smooth texture of the pepper paste. |
