摘要 The present invention relates to a method of producing high-quality coffee fermented with coconut water. More specifically, the method of producing high-quality coffee fermented with coconut water comprises the steps of: (a) preparing coconut water; (b) fermenting and preparing the coconut water of the step (a) at temperatures of 20-48°C for 3 to 24 hours; (c) drying and preparing a raw coffee bean with removed flesh to have less than 15% of moisture content; (d) mixing purified water with the coconut water of the step (b) at a weight ratio of 10 : 1 to 1 : 10 and preparing the mixed water; (e) immersing the raw coffee bean of the step (c) into the mixed water of the step (d) and fermenting the immersed raw coffee bean at temperatures of 15-42°C for 1 to 7 days; (f) taking out the fermented raw coffee bean of the step (e) and removing moisture; and (g) drying the raw coffee bean of the step (f) to have less than 15% of moisture content and commercializing the dried raw coffee bean.
