PROBLEM TO BE SOLVED: To provide a variant G6 PDH, using genetic engineering technique, which has an excellent heat resistance and improved thermal stability to be endurable to use in a wide application including an industrial use.SOLUTION: Excellent heat resistance can be provided and thermal stability can be improved by substituting a specific amino acid residue by other amino acid residue in an amino acid sequence of G6 PDH derived from Leuconostoc mesenteroides (Sequence ID Number 3). |
