In order to dry fermentation residues from biogas installations or liquid manure, a fermentation residue dryer (GT) has an evaporator (V) with a heating device (HV). The heating device (HV) can be heated by steam or hot water. Using a plurality of fermentation residue dryers (GT) it is possible to produce various installation configurations for efficient drying of different fermentation residues.
