PROBLEM TO BE SOLVED: To provide a manufacturing method of a chlorogenic acid-containing composition in which a chlorogenic acid-containing composition with reduced calorie can be obtained by a simple operation comparing to the chlorogenic acid-containing composition obtained by a conventional method in which squeezed oil residue of sunflower seeds is used as a raw material, and a chlorogenic acid-containing composition obtained by the manufacturing method, and food and drink containing the chlorogenic acid-containing composition.SOLUTION: A manufacturing method of chlorogenic acid-containing composition includes: a chlorogenic acid extraction step in which chlorogenic acid and glucide which are derived from squeezed oil residue of sunflower seeds, yeast, and solvent selected from the group consisting of water, alcohol, and liquid mixture of water and alcohol are allowed to contact, and extracted liquid containing chlorogenic acid is obtained from squeezed oil residue of sunflower seeds; and a bacterial treatment step of performing at least one treatment of germicidal treatment and sterilization treatment to the extracted liquid. |
