<p><P>PROBLEM TO BE SOLVED: To provide a method of extracting an easily hydrolyzed water-soluble protein from raw material originated from shell or pearl by process treatment which is simple and has a low environmental load. <P>SOLUTION: The raw material originated from shell or pearl is mechanochemically ground such that the factor of decrease based on diffraction intensity before grinding at a predetermined Miller index of aragonite crystal obtained by the X-ray diffraction method becomes a prescribed value. The water-soluble protein is extracted from the raw material originated from the ground shell or pearl by using water. The prescribed value is determined from a view point of extracting the water-soluble protein of a prescribed proportion according to an approximate expression representing a correlation between the factor of decrease of the diffraction intensity and the proportion of the amount of the water-soluble protein extracted from the raw material originated from the shell or pearl of the prescribed mass. <P>COPYRIGHT: (C)2012,JPO&INPIT</p> |
