The present invention relates to an evaluation method of fat material safety by using a reconstituted high-density lipoprotein. More specifically, the evaluation method of the invention comprises the steps of: synthesizing a reconstituted high-density lipoprotein containing a trans fat; identifying the cross-linking of Apo-I, the inhibition of LDL oxidation, the phagocytosis of oxidized LDL, embryotoxicity or an increase in fatty liver; and predicting the risk of aging and developing cardiovascular diseases such as hypertension and arteriosclerosis, cerebrovascular diseases such as dementia, or metabolic diseases such as diabetes and obesity, and evaluating the degree of danger. |
