<P>PROBLEM TO BE SOLVED: To provide a mix for octopus dumpling or vegetable pancake, capable of giving an octopus dumpling or vegetable pancake having good roast color, excellent in taste, having texture of crunchy surface and fragrance, and comprising a smooth inside having food feeling of good meltability in the mouth. <P>SOLUTION: There is provided a mix for octopus dumpling or vegetable pancake, comprising 0.01-1 pt.mass malt powder and 100 pts.mass cereal flour.
