PROBLEM TO BE SOLVED: To provide a saltiness enhancer having a sufficient effect by the use of a minimum amount without change in the taste of foods, capable of enhancing the saltiness without change in the natural expression of saltiness of a salt; a salt composition with enhanced saltiness, having a taste and an expression pattern of saltiness equivalent to those of sodium chloride.SOLUTION: The saltiness enhancer includes carbamide as active ingredient, preferably further including lactic acid and a lactate, or a saltiness enhancer including lactic acid and a lactate. |
