The present invention relates to a blueberry-made noodle which is manufactured by the following steps of: trimming a blueberry stalk; washing the blueberry; mixing the whole washed blueberry with white flour; mixing and kneading the blueberry with the white flour with use of a mixer; and turning the blueberry into noodles with use of an extruder or a rolling mill, thereby preventing anthocyan, which is an anti-oxidant agent, from binding oxygen among air and leading to inhibition of oxidation. The anthocyan, which is an anti-oxidant agent from blueberry, is protected in the manufacturing steps, thereby enabling the blueberry-made noodle to have anti-oxidant agent like anthocyan and leading to anti-aging, fatigue removal and metabolism. |
