PROBLEM TO BE SOLVED: To provide a food composition derived from oat bran, in particular from naked oat bran; and a manufacturing method thereof.SOLUTION: A composition is obtained by a method including at least: a pulverization step of pulverizing oat bran to physically break the cell wall for isolation of &bgr;-glucan in the crushed material; and a step of activating at least one enzyme selected from the group consisting of phytase, cellulase, lysozyme, and xylase with the crushed material. The composition contains a large amount of useful nutrients or nutrient components such as dietary fiber, protein, fat, and mineral, in addition to &bgr;-glucan. |
