PROBLEM TO BE SOLVED: To provide an ingredient-enriched brown rice, which is enriched with a functional ingredient such as polyphenol, free from the problems of conventional ingredient-enriched rice such as reduction in the rice polishing ratio and reduction in the taste and texture, having sufficient strength durable for rice polishing and rice cooking, with an excellent texture.SOLUTION: The manufacturing method of ingredient-enriched brown rice includes applying pressure to brown rice immersed in water in amount of at least 50 wt.% relative to the amount of the brown rice, so that bran ingredients migrate into the endosperm from the bran by permeation. Consequently the endosperm is enriched with the bran ingredients. |
