The present invention relates to a method for producing plum fermented vinegar. More specifically, the present invention relates to a method for producing plum fermented vinegar, which can produce plum fermented vinegar, which is beneficial to health, by mixing pectinase for smooth acetic acid fermentation of fermented vinegar, and by replacing liquid fructose with natural materials. The method includes: a first step of washing plums; a second step of removing fiber by mixing the washed plumbs with pectinase; a third step of diluting the fiber-removed plumbs with purified water after filtrating the plumbs; a fourth step of performing alcohol fermentation on the plumbs after mixing the diluted plumbs with yeast; a fifth steps of producing plumb fermented liquid by performing acetic acid fermentation on alcohol-fermented plumbs after mixing the alcohol-fermented plumbs with a strain for acetic acid fermentation; a sixth step of producing plum fermented liquid by ripening the plumbs on which acetic fermentation has been performed; and a seventh step of mixing and agitating the plum fermented liquid with an additive mixture containing at least one among fructo-oligosaccharides, purified water, and a concentration liquid mixture containing at least one among pretreated plum concentrate, pear concentrate, quince concentrate, pomegranate concentrate, and jujube concentrate. |
