<p>The invention relates to the food industry, namely to a process for producing kvass.The process, according to the invention, comprises preparation of kvass wort by diluting the kvass wort concentrate with heated water, addition of 25% of the calculated amount of 65% sugar syrup and production of wort with the concentration of 3.2% dry substances, introduction of baker's yeast, fermentation of wort, cooling and clarification of the young kvass, blending with the residual sugar syrup, at the same time the sugar syrup is produced by substituting 30% of the calculated amount of dry substances of the sugar with dry substances of the sweet sorghum juice concentrate with a content of 73…75% of dry substances and 45…50% of fermentable substances.The result consists in increasing the shelf life and reducing the production costs.</p> |
