The present invention relate to a method for manufacturing duck soup retort-food. The method includes the steps of: slaughtering a duck bred by feeding a feed including garlic; washing duck meat butchered in the step of slaughtering; ripening the duck meat, processed by the step of washing, at low temperatures; heating the duck meat, processed by the step of ripening, with steam; adding red ginseng in the duck meat processed by the step of heating; mixing broth with the duck meat, processed by the step of adding red ginseng, and natural materials to manufacture the duck soup; sealing a pouch of the duck soup after putting the duck soup in the pouch for vacuum packaging; and retorting the pouch, processed by the step of sealing, by heating and sterilizing the pouch. According to the present invention, an instant retort-food with enhanced nutrients can be provided by using the duck meat and natural materials, and the duck soup resort-food with less off-flavor unique to the duck meat can be provided while the duck meat is used. |
