PROBLEM TO BE SOLVED: To provide a production method, in the production of processed rice, excellent in both of the loosing and texture of the rice, and useful for the stabilization of the process and quality.SOLUTION: Provided is a method for producing processed rice where, in a rice cooking step, the loosing and texture of rice are improved by using different two or more kinds of amylases with different working optimum temperatures. Preferably, the method for producing processed rice involves a rice cooking process using one or more kinds of heat resistant amylases in which the working optimum temperature is 60 to 100°C and one or more kinds of amylases in which the working optimum temperature is 30 to 60°C. |
