<p>PROBLEM TO BE SOLVED: To provide a technique capable of producing a bread having high quality higher than that by the conventional bread production method.SOLUTION: Provided is sugar solution dough obtained by kneading a sugar solution at 75°C or higher with grain flour. According to this invention, compared with breads produced by an ordinary straight method and breads produced using hot water dough, a bread having a satisfactory volume in the finished bread, also high in the maintainability of softness, a moist feeling, a melt in the mouth and a soft feeling and having high safety and conservation can be provided. Further, the sugar solution dough can be conserved in frozen, chilled or refrigerated states and can be circulated.</p> |
