The present invention relates to Torulaspora delbrueckii JBCC 623 strains and Pichia guilliermondii JBCC 848 strains highly efficient in producing alcohol. The present invention also relates to a composition which is used to product alcohol and includes the culture of the strains or a concentrate thereof as an active ingredient or a composition for increasing the storage stability of low-salt paste products. According to the present invention, a method, which is used to increase the storage stability of such low-salt paste products, includes a step of adding the strains, the culture of the strains or the concentrate thereof onto a Koji and fermenting the substances. |
