<p>The present invention relates to a manufacturing method of meat products without synthetic sodium nitrite by using a fermented solution of an extract of fruits and vegetables cultured in a plant factory at a standardized nitric acid concentration. The manufacturing method of a fermented solution using fruits and vegetables of the present invention comprises: a) a step of obtaining fruits and vegetables having standardized components through a plant factory production system using a culture medium containing nitrate; b) a step of washing the fruits and the vegetables, juicing, filtering and diluting with purified water to obtain an extract; and c) a step of adding glucose and nitrate-reducing bacteria to the extract, fermenting, sterilizing, and cooling.</p> |
