摘要 <p>PROBLEM TO BE SOLVED: To provide a method of producing carbohydrate-reduced sake capable of adequately reducing carbohydrate in sake by reducing carbohydrate, which decomposes to glucose, except for sugar.SOLUTION: The method of producing carbohydrate-reduced sake includes a preparing process for making moromi (unrefined sake), and a fermenting process of fermenting to moromi. Drawn water for brewing and after-adding water are added so that the total of a percentage of a total volume (L) of drawn water for brewing to a total weight (kg) of rice and molted rice in a preparing process and a percentage of a total volume (L) of after-adding water to a total weight of rice and molted rice in a fermenting process is not less than 200%, and addition of after-adding water is performed within an initial stage of fermentation of moromi. In the fermenting process of moromi, the initial stage of fermentation of moromi is within 10 days of moromi days.</p>
