摘要 <p>The present invention relates to a preparation method of a functional schisandra raw rice wine, and more specifically, to a preparation method of a functional schisandra raw rice wine comprising the following steps: manufacturing a schisandra extract by mixing raw schisandra with sugar in a weight ratio of 1:1 and aging the mixture for 3-4 months; adding 27 wt% of white sugar and 3 wt% of oligosaccharides to 70 wt% of the schisandra extract and mixing the outcome at 45 deg. C; sterilizing the mixed schisandra extract by a high temperature short time method (HTST) and diluting the outcome with 100-300 times larger amount of extra water; manufacturing an aged rice-wine mash through an Ipguk(culturing molds in steamed crops), making Mitsul, an alcohol first mashing, an alcohol second mashing which are normal processes for manufacturing a rice wine; and mixing 50-200 wt% of the diluted schisandra extract to 100 wt% of the aged rice-wine mash. The schisandra raw rice wine, according to the present invention, can increase preference with a natural red color and improve storability of the raw rice wine by an antibiotic property of the schisandra. Additionally the consumption of schisandra is promoted since various kinds of biological- functional ingredients and living yeast can be ingested. Furthermore, a stable income model is provided to schisandra farms while contributing to national health.</p>
