The present invention relates to a method for producing soybeans with an increased isoflavone content and antioxidation capability, which comprises germinating swollen soybean seeds and irradiating far-infrared rays to the germinated soybean seeds. In the invention, provided are also food and beverages containing the soybeans with an increased isoflavone content and antioxidation capability. The optimal conditions for increasing an isoflavone content and antioxidation capability obtained in the invention are expected to be used as the basic research resources that can be applied to various plants as well as soybeans. |
