<p>The present invention relates to Candida utilis TK20 (accession number KFCC 11558P) which is a mutant yeast strain belonging to Candida sp. and a method for culturing the same. According to the present invention, a mutant yeast strain containing equal to or more than 15% of nucleic acid is provided, and by culturing, in an industrial culture medium, the mutant yeast strain with a high concentration, an yeast extract which has a high content of nucleic acid and equal to or more than 20% of an IG content, and which is abundant in glutamic acid, with a strong savory taste and a reduced yeast flavor, and a method for manufacturing the yeast extract, are provided.</p> |
