本发明系有关于一种加速酒熟成的装置及方法,主要是令酒及水分别同时进入同一电解设备,以对酒与水进行电解,在电解过程中产生的OH-基团将与酒分子产生一系列的氧化作用,即酒分子中醇类氧化成醛类,醛类氧化成酸类、酸类再与乙醇行酯化作用而产生具有香气的乙酯类,同时电解后由原本的大分子团变成小分子团的水分子将与酒分子紧密结合,且包围住酒分子,以在短时间之内即达到酒熟成之目的的效果,使酒入口的口感更为醇厚、芳香。 The present invention relates to adevice for acceleration of wine aging and a method of the same. Particularly,wine and water are poured into a same electrolysis equipment for electrolysis purposes, so that OH bases can be produced in the electrolytic process for oxidation actions with wine molecules, i.e. oxidation of alcohols into aldehydes, oxidation of aldehydes into acids, and esterification of acids with ethanol for production of ethyl esters having fragrance.Currently the water whose original large clusters of molecules turn into small clusters of molecules after electrolyzing will be able to closely bond to and surround the wine molecules.
