<p>The present invention relates to a method for preparing alliinase derived from garlic. The method for preparing alliinase derived from garlic according to the present invention is a method for maximally improving the yield of alliinase which can be usefully used for food. The method for preparing alliinase derived from garlic according to the present invention comprises the steps of: (a) obtaining a liquid fraction; (b) obtaining a solid content; (c) obtaining alliinase; and (d) freezing and drying the alliinase obtained in the step (c), and then pulverizing the alliinase.</p> |
