The invention relates to a product obtained from coffee silverskin, characterised in that it is (a) powdered coffee silverskin or b) coffee silverskin extract. The invention also relates to a method for extracting coffee silverskin, comprising a step of extraction with water, preferably with subcritical water. The invention further relates to the use of the product obtained from coffee silverskin in cosmetics or functional food, especially for preventing physiological ageing processes, as a food preservative for preventing oxidative processes and as a source of caffeine.
