The present invention relates to a method for preparing Kimchi comprising artichoke fermented solution, the method comprising the steps of: (1) cutting artichoke, mixing the same with sugar, fermenting the mixture at temperature of 20-40°C, and filtrating the fermented mixture to produce artichoke fermented solution; (2) adding 5-20 wt % of the artichoke fermented solution produced in step (1) to Kimchi seasoning; and (3) making use of the Kimchi seasoning manufactured in step (2) to manufacture Kimchi. Kimchi manufactured by the present invention has superior retention and sensual characteristics, and can provide sensual characteristics comparable to typical Kimchi with addition of artichoke fermented solution, thereby contributing significantly to improving the health of consumers and increasing demand for kimchi. |
