PROBLEM TO BE SOLVED: To provide dredged-type mix flour for deep-fried food-like unfried food enabling preparation of deep-fried food-like unfried food the coating part of which is free from stickiness and has crunchy palate feeling even when cooked with a microwave oven, and the ingredient of which is juicy and rarely causes loss of Umami components.SOLUTION: The dredged-type mix flour for deep-fried food-like unfried food includes the following components (A) to (C): (A) 1-15 pts.mass of Gellan Gum based on 100 pts.mass of the mix flour for deep-fried food-like unfried food; (B) calcium lactate having 0.01-1 pt.mass of calcium derived from the calcium lactate based on 100 pts.mass of the mix flour for deep-fried food-like unfried food; and (C) ≥30 pts.mass of durum semolina based on 100 pts.mass of the mix flour for deep-fried food-like food. |
