The present invention relates to a composition for improving the quality and management of the moisture of fish products, and to a method for improving the quality of said products and to the use of said composition. The composition of the present invention comprises glycine and alkaline compounds, such as for example sodium hydroxide, potassium hydroxide, or their salts such as sodium glycinate or potassium glycinate, as well as the mixtures thereof. The composition of the invention is introduced in an initial solution to which the fish product is subjected having a pH in a range comprised between 8.5 and 11, preferably a pH of 10.5. |
