The present invention relates to a method for continuous or semi-continuous production of wort, which includes the following steps: a) preparing mash by mashing raw materials that contain starch, optionally malted and optionally previously ground up; b) brewing the mash in order to hydrolyse the starch into fermentable sugars; c) separating the spent grains in order to obtain a wort; d) heat-treating the wort at a temperature of 95°C to 140°C; e) cooling the wort to a temperature of 80°C to 90°C; f) clarifying the wort at a temperature of 80°C to 90°C; and g) cooling the clarified wort to the fermentation temperature; steps d) to g) being performed continuously. |
