FIELD: food industry.SUBSTANCE: device for sausage products express-settlement includes an electromagnetic vibrator operating within the sound frequency range of 20-20,000 Hz with increased mechanical oscillations amplitude. Mechanical impact bidirectional transmission is performed from the electromagnetic vibrator to a sausage link hung to the sausage frame by means of a twine or caprone thread loop. The method ensures manufacture of sausage products of high quality, with a dense solid structure and a bright uniform shade along with settlement duration reduction. The method is effective for manufacture of raw smoked and raw dried sausage products; treatment process duration is 18-24 hours instead of 5-7 days.EFFECT: device may have comparatively low weight, is easy in operation mode adjustment and convenient in usage.1 dwg |
