Fermenting flowable substrate with a defined dry substance content, using a reactor, comprises (a) supplying the substrate through at least one inlet (1) of the reactor, (b) passing the substrate through the reactor exhibiting several partition walls (6), (c) discharging the fermented substrate from at least one outlet (3), (d) removing process gas from at least one gas chamber that is separately formed from remaining gas chambers or chambers of remaining compartments, and (e) supplying previously purged process gas and/or external gas into inner volume of at least one of formed compartment. Fermenting flowable substrate with a defined dry substance content, using a reactor, comprises (a) supplying the substrate through at least one inlet (1) of the reactor, (b) passing the substrate through the reactor exhibiting several partition walls (6), which divide at least one inner volume of the reactor that is specific for the substrate into several compartments, where each individual compartment is respectively subdivided into two opposite chambers (8), through which the substrate flows, (c) discharging the fermented substrate from at least one outlet (3) of the reactor, (d) removing process gas from at least one gas chamber that is separately formed from remaining gas chambers or chambers of remaining compartments, and (e) supplying previously purged process gas and/or external gas into the inner volume of at least one of formed compartments. At least one portion of the partition wall in its spatial position and/or extension is moved for increasing or reducing the ratios of the volume of the chamber, through which the substrate flows in one direction, and the volume of chamber, through which the substrate flows in other direction. Each compartment exhibits inner volume that is specific for the substrate and an associated gas chamber. The gas chamber of the compartment, which is selected from all the gas chambers of all compartments, is separately formed from the remaining gas chamber or gas chambers of the remaining compartments. An independent claim is also included for the reactor for fermenting the flowable substrate with defined dry substance content, comprising the inlet, the outlet, and several partition walls, where the gas chamber has a gas outlet for removing process gas, and the compartment has a gas inlet for supplying process gas and/or external gas.
