In an apparatus for injecting meat, e.g. hams, with liquids, e.g. curing salt solutions, a ham is placed on a concave seat 62, and while held down by a pneumatically operated clamp 76 is pierced by a plurality of injectionneedles 24 mounted on a pneumatically operated hollow manifold 16. After the insertion of the needles 24, the clamp 76 is first withdrawn upwardly and then pickling solution is injected into the ham through the needles 24. The needles are then withdrawn and the ham is ejected from the apparatus by a pneumatically operated pusher head 100. A timer motor controls via solenoid valves the timed functioning of the pneumatically operated devices of the apparatus including the supply of pickling solution to the manifold 16. The height of the needles 24 is arranged such that the depth of penetration is less in the vicinity of the bone in the ham. Preferably the ham is first subjected to arterial injection in known manner, injected as described above, and then cured under cover pickle for about one day.
