In the present invention, provided is a composition substituting for phosphate added in food, which includes a fruit concentration solution, an organic acid and a potassium salt or sodium salt. The present invention relates to a composition substituting for phosphate added in food based on the fruit concentration solution and food using the same wherein the composition substituting for phosphate added in food comprises 0.01-99.90 wt% of the fruit concentration solution, 0.01-99.90 wt% of the organic acid and 0.01-99.90 of the potassium salt or sodium salt for 100 wt%, thereby promoting tissue strength, softening property and functionality of food.
