<p>A method of making a tea extract comprises treating (e.g. at 5-30 DEG C.) tea leaves (e.g. freshly picked tea leaves, fired green tea leaves and black tea leaves) with a mixture of water and acetone to extract soluble tea solids, separating the spent tea leaves from the tea extract (e.g. by filtration or centrifugation), removing the acetone from the tea extract (e.g. by evaporation under vacuum) and if desired drying (e.g. by freeze drying) the extract to a water soluble powder. The extracting liquid may comprise 5-90% by volume of acetone.</p> |
