The present invention relates to a manufacturing method of fermented soybean lump using lotus leaves, comprising the steps of (a) putting dried lotus leaves in cold water and extracting components of lotus leaves; (b) soaking beans in the cold water used for the lotus leaves for 24 hours; (c) boiling the soaked beans for 5 hours; (d) grinding the boiled beans in a large mortar; (e) mixing the boiled beans with lotus leaf powders and turning the mixture into fermented soybean lump; and (f) aging the fermented soybean lump for 25 days. In the present invention, the fermented soybean lump is manufactured by using the lotus leaf powder and cold water used for the lotus leaves, improving preference of consumers, due to taste, smell and color of the lotus leave, and promoting consumers′ health, due to intake of active ingredients from the lotus leaves, thereby enabling farmers who culture lotus to make money. |
