The present invention relates to a fuel viscosity control apparatus and a fuel viscosity control method for an engine. The fuel viscosity control apparatus for an engine comprises: a pipeline connecting the engine and a fuel tank storing a fuel to be supplied to the engine; a first measurement part capable of measuring the temperature of the fuel, which is discharged from the fuel tank and is supplied to the engine, when installed on the pipeline; and a heating part installed on the pipeline, capable of controlling the viscosity of the fuel, which is discharged from the fuel tank and is supplied to the engine, when controlling the temperature of the fuel according to the temperature measured by the first measurement part. The fuel viscosity control apparatus according to the present invention is capable of preventing the engine from being damaged or broken by a variation in the viscosity of the fuel, thereby not only reducing the operation costs of the engine, but also improving the operation rate of the engine.
