摘要 PROBLEM TO BE SOLVED: To obtain each kind of whip food dough such as meringue, whole egg, fresh cream and sponge dough, finished in a constant even/best whipped state.SOLUTION: A mixer operating method includes: measuring and detecting at real time a conductivity of whip food dough, changing during whipping action, when whipping each kind of whip food dough stored in a food dough storage container with a vertical mixer which includes the food dough storage container (T), stirrers (P1) and (P2) rotatably driven in the inside thereof, and a heat source (H) of the food dough storage container, with a wireless conductivity detection sensor (S) which performs a revolving motion together with the stirrers in the inside of the food dough storage container; and automatically controlling so as to stop only the rotary drive of the stirrers or the rotary drive and heating by the heat source, based on an output signal that the conductivity detection sensor detects that previously set final finish reaches a target measured value.
