PROBLEM TO BE SOLVED: To provide a noodle-like food product, capable of maintaining the chewing texture of the noodle even when immersed in a salt-containing solution at high temperature for a long time or boiled in a salt-containing solution; and a manufacturing method thereof.SOLUTION: The noodle-like food product includes a divalent metal salt of alginic acid, having an M/G ratio of 0.8 or less. The divalent metal salt of alginic acid can be, for example, calcium alginate. The noodle-like product may include a soybean preparation and a vegetable paste. |
