PROBLEM TO BE SOLVED: To provide a polygalacturonase exhibiting an endo type decomposition style, acting in a neutral to an alkaline region and stable to surfactants and chelating agents, a method for producing the same and a method for producing a mono- and oligo-galacturonic acid by using the enzyme.SOLUTION: This polygalacturonase includes the following zymologic properties: (1) the activity of acting on a polygalacturonic acid, hydrolyzing the α-1,4 bond of the polygalacturonic acid in an endo type, and producing the oligo-galacturonic acid; (2) the optimal reaction pH being in the vicinity of pH 7 (in tris-hydrochloric acid buffer); (3) the optimal reaction temperature being approximately 40 to 50°C (in the tris-hydrochloric acid buffer, at pH 7.0); and the (4) molecular weight being approximately 52,000 (by a gel filtration method). |
