PROBLEM TO BE SOLVED: To provide a fat composition from which a plastic fat readily meltable in the mouth, having plasticity in a wide temperature range from low temperature to high temperature, excellent in stability with extremely small amounts of effusion, changes in hardness, and the like, even when stored for a long period can be obtained; and a plastic fat composition using the same.SOLUTION: A lauric fat (A1) with a lauric acid content of 30 mass% or more and a fat interesterified with a palm oil (A2) with a content of fatty acid having 16 or more carbon atoms of 35 mass% or more, including an interesterified fat (A) with a proportion of triglycerides having constituent fatty acids with 40 to 46 carbon atoms in total of 15 to 35 mass%, with an iodine number of 20 to 45 are mixed to obtain the fat composition. The total proportion of di-saturated or tri-saturated triglyceride is 30 to 65 mass%. The di-saturated triglyceride has a mass ratio between a symmetric type and an asymmetric type of 0.25 to 1.2. The proportion of triglycerides having constituent fatty acids with 40 to 48 carbon atoms in total is 5.0 to 30 mass%. The amount of trans acids is 0.1 to 3 mass%. |
