PROBLEM TO BE SOLVED: To provide a method for using nearly the whole quantity of raw material of hardly-decomposable fiber as seasoning material having a natural and favorable flavor without performing a special preliminary treatment or a complicated process.SOLUTION: The method for manufacturing a seasoning extract includes performing the subcritical water treatment of a raw material of hardly-decomposable fiber derived from at least one organism contained in raw material plants, seaweeds, and basidiomycetes, with all the following conditions satisfied: (i) the raw material contacting with a solvent prepared to contain 0.5 to 6% (mass/volume) of an organic acid relative to the total liquid amount of the solvent and the water component in the raw material; (ii) a high temperature of 120 to 220°C; and (iii) contacting the raw material with water in a subcritical condition for 1 minute or more. |
